Tinola is a Filipino soup dish usually served as a main course with white rice. Traditional dish that is cooked with chicken, wedges of papaya or chayote and leaves of siling labuyo, Chile pepper in broth flavored with ginger onions and fish sauce. These are a very good source of nutrients.

  • 1 whole chicken cut into serving pieces.
  • 36 ounces rice washing or plain water
  •  ½ piece green papaya or 2 pieces chayote cut into wedges (your choice)
  • 1 tablespoon of garlic minced
  • 1 piece of onion chopped
  • 1 thumb ginger cut into strips
  •  2 tablespoon fish sauce
  •  1 cup Hot Pepper leaves/Chile leaf or Malunggay leaves (your choice)
  • 3 tablespoon of fish sauce
  • ¼ teaspoon ground black pepper

Cooking Instructions:

  1. Heat Oil in a cooking pot.
  2. Start sautéing the garlic until it is light brown, onion until its translucent then followed by the strips of ginger. You’ll smell the aroma while cooking.
  3. Put/add the chicken pieces. Cook for 3-5 minutes or cook until the color of the chicken turns to light brown. (sauté longer if desired)
  4. Add a bit of fish sauce (You have an option to add this at the end of the cooking process). Then Stir.
  5. Pour rice washing (or Plain Water) into the cooking pot. Let it boil in low heat for 40 to 45 minutes until chicken tenderizes. Cover the pot and let it boil.
  6. Add the green papaya or chayote once chicken gets tender.
  7. Then add Chile leaves (dahon ng sili) or malunggay leaves. (Your choice)
  8. Transfer to a serving bowl. Serve hot. Share and enjoy!
